We are a factory specializing in making handmade clay amphorae (kvevri or quevri) in China. In my hometown,
quevri with a capacity of over 1000L has been made for hundreds of years.

It is widely used in vegetable pickling and food fermentation. Now, the wine-specific clay pot we invented can not only be used to store wine,

but also ferment and control the temperature, and can be used on the ground to ensure hygiene and beauty.

In natural wines, commercial yeast strains are typically not added, but rather local strains are harvested by the wine from the air itself, and fermentation begins spontaneously. This lends a sense of place and excitement to the wine that we love.

The insides of the quevri are coated in natural beeswax to provide a stable environment for the wine, and aging in clay provides a unique flavour profile unattainable in steel or oak.

We let nature do its work, allowing our wines to ferment with only the naturally occurring yeasts. Think of us as grape babysitters, nurturing the purest essence of each grape varietal.

We produce ceramic jars, which are divided into jars for grape wine fermentation and aging, jars for general food fermentation. Currently, the most economical products are those below 1000 liters. Of course, we can make larger ceramic jars for you, depending on your budget. As non-standard products, we may need to create new tools or molds.

 

Our ceramic jars are made in Chongqing, China, using natural clay as raw material and fired at high temperatures of 1200 degrees Celsius. Many substances undergo gasification and escape, resulting in tiny pores. These pores provide micro-oxygen for fermentation and have a similar effect to oak barrels for grape wine fermentation and storage. Furthermore, the minerals in the ceramic jars can bring some catalytic effects to the wine, a phenomenon that has been verified in the hundreds of thousands of ceramic jars used for storing high-altitude liquor in China each year.

The jars for grape wine fermentation and aging are different from other ceramic jars. They do not need to be buried underground to achieve low temperatures. They have an electronic system that can control the temperature and provide the temperature you need during fermentation. As we all know, we often need lower temperatures during grape wine fermentation to obtain good fruit flavors.

There is also a slag outlet at the bottom of the ceramic jar, which can effectively discharge the skin residue during fermentation of dry red wine. Of course, as accessories for traditional fermentation jars, there are also bottom valves, sampling valves, temperature gauges, and one-way valves.
The food-grade stainless steel cover at the bottom of the jar has sealing properties that ordinary ceramic jars do not have. Together with the one-way valve and the volatile acid control device we invented, it can maximize the protection of the aroma of the grape wine.
